From a fresh install, I always get the following.
SMS Backup+ (back up text messages to gmail)
Tweetdeck (twitter client)
Google Listen (podcast app that uses your Google Reader "Listen" subscription)
Hullomail (alternative voicemail provider, records voicemails as mp3's within gmail. This makes accessing voicemail free, something that's rarely the case for phone contracts [unless it's just T-mobile])

If you use them, get the official native apps for Twitter and Facebook - for those times when you don't want your thoughts emblazoned across four different social networks (I personally like to keep my tweets and facebooking separate!).
I'm currently playing with the free (ad-supported) version of K9 mail (mostly because the LG default email app is pretty poor) and it's pretty good.
Archmage is a really fun time killing game for when you get bored of Angry Birds
I always use Dolphin HD browser, although that's more personal preference.
And if you listen to radio much try TuneIn for streaming internet radio - all sorts of random streams and stuff available through that.

Flixster, IMDB, PocketCloud (awesome free remote desktop app), WhatsApp Messenger
3G watchdog is good for checking you're not going over your subscribed data allowance. Shazam's pretty good for that 'What the hell's that trck' moments, although I think Sony publish something like this themselves. Flick kick football is great, although you have to pay for it...
Removed from the market but you can still find it about: Penetrate (Amazingly useful to prove to people how unsecured their Wifi is)
Tapatalk is probably my most used app - especially now hexus is on there!
Firefox (synced to desktop), Redlaser (IMO better then barcode scanner), adobe reader, skype, teamspeak, flashlight (probably the biggest life safer!), Android Lightsaber (the most fun app ever!), amazon kindle, BBC food mobile, iPlayer, bump, beautiful widgets...

Here's my preferred Android apps..
Opera Mobile for when viewing flash websites
Opera Mini for when in 2g data network areas (Opera compress the web page to about 15% of its original size - the result...broadband like browsing on 2g networks!).
Tuneinradio - for listening to any radio station, anywhere in the world. Very slick!
Any.do as my personal organizer. Beautiful interface, and genuinely helpful
Google Maps for driving directions.
DROPBOX - just a great cloud storage app. Remember to invite friends...everyone that signs up means an extra 500mb of space for you!
BBC iPlayer - now works on 3G...though can be temperamental
Pansi SMS as my SMS client...pretty and works much better than Sony stock.
Go Launcher for home screen launcher
WhatsApp for free messaging with other smartphone users...

Right..that's about all of my best apps! Will no doubt have more once I've rooted my Xperia Arc S (such as tethering apps for use on the Three UK network)
