I'm on vodafone, what services or requirements are required for watching tv?
A link cable of some sort, probably along the lines of a composite PAL cable?
Should already be supplied with the phone...I could be wrong however...

There is no way as far as im aware to output video signals to a tv from a nokia n70 , the only thing you can output is audio by purchasing a Nokia Pop Port to 3.5mm adaptor and then use a 3.5mm to phono rca cable.
If you're talking about vodafone live sky tv however, provided the N70 is on vodafone and settings are pre-configured, just simply connect to vodafone live, visit the Entertainment section and Mobile TV is at the topIt's only free til 31st January, mind.
You also need to be in 3G data coverage for the service to work, which is indicated by 3G displayed underneath the signal strength indicator.
