media player 11 at the mo as i havent bothered to install foobar yet.
for audio id say foobar or winamp altho i have found winamp to be v unstable.
video always been media player.
i have a x-fi but dont bother with creative software as i dont like the gui.

Audio : winamp (the greatest the best)
video : vlc (doesn't murder my system)
audio: mediamonkey(I've yet to see the search option beaten)
video: Media player classic or WM11.
I do know everything, just not all at once. It's a virtual memory problem.
Foobar for music, and normally VLC for vids, but it doesn't seem to want to play with Vista x64. So back on Media player classic, which fair does it, has never faltered once in all the years i've used it.

I've been a long time Foobar2000 user - (Since v.7). Big fan, especially of replaygain and columns_ui.
But recently I've also been using Songbird alongside. Which is like a filthy threesome between iTunes, Firefox, and the internet. Amazing for anyone who listens to music blogs.

Oh and for video I use media player classic + ffdshow. (upscaling-filter-chain: spp pre-process -> lanczos resize to 1440x900 -> noise luma 10)
For watching stuff from network shares I use mplayer -cache 20000 to avoid any chance stuttering.

Audio: Foobar for albums or playlists, Media Player 11 for single tracks.
Video: KMPlayer for everything now. It's like Media Player Classic, except I got it working with my Media Centre remote and DiNovo MediaPad.
TV: Windows Media Center 2005 for TV on my main rig and Vista Ultimate's Media Center on my HTPC.
