Can anyone please recommend any file recovery software for recovering
deleted files etc. I used to use Ontrack Easyrecovery Professional but
it does not support Vista.

Well your backup is probably the best place, but apart from that, there are lots of tools out there that support file recovery from NTFS file systems.
A very quick Google search came up wit several hits - including this one

Alternatively you could install the disk in a machine that does have an OS that supports Easyrecovery and retrive the deleted files that way.

As peterb says, backups are your best bet, but in a data recovery scenario GetDataBack by Runtime is the best I've used.

Zero Assumption Recovery (ZAR) is the best I've used, including GetDataBack.
It's got support for hard drives as well as some specialist options for RAID arrays and memory cards and things. It's pretty damn impressive. It's got a free trial (which I presume lets you recovery during that time) and it's damn cheap if you do choose to buy it.
FreeUndelete 2.0 is one of the better free ones I've used. Hexus reviewed it back in 2006. It works fine on Vista (x64) just as it does on XP.
Nothing works like incremental backups though.
I agree with Splash in using GetDataBack, but would also recommend looking at R-Studio as this has some very nice options for reconstructing the FAT and has Vista support I believe. Saved me from a headache a few times.
