Using the Extended Tags option it will show you all the tags, regardless of whether it has an interface item for it or now (a limitation of Tag&Rename that annoys me). You can also built natural expressions to process your files in mp3tag.
I don't like the interface for everyday stuff, but if you have a problem with your tags, it's great at getting them sorted out.
I had an issue with some albums appearing twice in SqueezeCenter. I eventually traced it down to dbPoweramp creating a "Totaldisks" tag. This is fine when you remember to change an incorrect disk number ("x/y") before ripping. If you don't, and just get Tag&Rename to change the them, it doesn't tought the "totaldisks" tag, so you get the album listed multiple times in SqueezeCenter. An easy fix now I know about it, but a pain in the ass to begin with.
what if you try refreshing the tags? like saving it as you see it
in which program?
So Tag&Rename and mp3tag are both showing them as clean?
Is Album Art Downloader the only thing that is showing the strange characters or is something else shoing them as well?
I think it might be just the Album Art Downloader showing it with that specific wierd symbol.
But here is how the messed up tags look like on itunes/ipod:

Text encoding type perhaps?
If mp3tag shows them correctly, then you can dump that data to a file (like wise with Tag&Rename), clear the tags, then restore them from the text.
I've also heard that in mp3tag, you can copy the tags, delete them all, then undo the deletion and it will remove erant tag data that isn't visible and clear older ID3 blocks that may be confusing things.
Worth a shot on a backup of a subset of some of the music.

Very strange, so i've deleted the tags from my "test album". The filenames are good so its no loss, i can get them back
Album cover art downloader is still able to "read" the album name and artist, through folder structure i assume. And it displays it properly, no wierd symbol.
So i re-tag the album and artist manually (tried both mp3tag & tag&rename), refreshed the view in Album cover art downloader, and the symbol is back!
i'm lost, its attached itself to these albums somehow, and it'll read from folder names fine.
BUT when its put into itunes it seems to show up fine, so i dont know if it only affects Album cover art downloader, which is minor. Or whether it'll creep up later in other programs

Do any of the tagging programs you are using have a unicode flag that can be toggled for each album?
Almost looks like unicode has been selected but some programs do not support it.

I agree with blueball... may be it'll solve your issue. As for me I bought a special program-editor mp3Tag Pro. It is quick and I can manipulate my audio files with a minimum effort. But it's only my opinion ;-).
Ok so i've managed to undo that error, but more importantly i really underestimated iTunes for tag editing. Ok so it doesnt do batch processing etc very well but once you have that done the rest can be done neatly within itunes. Cover art etc, i'm starting to use disc number and album artist too, as well as the "part of a compilation" option. When you combine all of that, the music goes onto the ipod very neatly
