Very little IIRC. Just Bitlocker in Ultimate, I think. Go for Pro, unless you can get Ultimate cheaper.

Multilanguage is a pain - you can't (legally) install language packs on Pro which is a real issue for business (and some users otherwise). Enterprise has them but can't be shipped..

If Win 7 Enterprise is anything like Vista enterprise then you can't get it easily though normal open licence agreements. You need to be purchasing >250 licences and get it under a "Select Agreement"
But, I haven't read up on Win 7 licencing just yet so it might not be the same!
Basically home premium for most people, professional if you want to connect to a domain and ultimate if you want laptop encryption bit locker etc.
