I have Windows 7 Pro on there now, do you think there is a better OS i could use? Windows Server? FreeNAS?

You want the server and the HTPC to be the same box? If you're running Plex you'll need to shoe horn OSX onto it.
FreeNAS is a NAS only distribution, so you can't install XBMC on top.
Yeah, im doing it with 7 Pro now, but its not very much of a fileserver. Plex runs on on any OS btw

Well I've been using W7Pro as the OS for my server with a couple of RAID cards and 20 disks in total (see the link in my sig for the thread, although it is really out of date at the moment). The good thing about W7 is I can also run anything else on that system. So I can easily make use of the quad core processor in the box for transcoding or anything else. Being a simple file server takes pretty much zero resources from this box, especially in a home environment.
I'll be rebuilding this setup shortly and be splitting the TV server part of it into a seperate box, so the server will be just that: a file server, but with the option to make use of the processing horsepower for other tasks.
