You can get everything! Have a good old nose around source forge and you will see!

there are a few full open-source games (Flightgear flight sim, Tux Racer, some racing game I forgot the name of), a whole stack of little ones (nothing really more complex than solitaire type games)
what's more common are open-source engines, for closed-source data files (art, sounds, maps, etc). for example, quake 1 & 2 are open source engines, but the levels etc aren't - so there are a number of replacement quake executables such as Tenebrae, which rely on data from retail Quake. all the lucasarts point & click games can be played using the open-source ScummVM engine, and the closed-souce games Beneath a Steel Sky and Flight of the Amazon Queen have been released as freeware (not open-source) to play with ScummVM.
