OK will it be easy for me to install win xp onto my new sata drive or will it be a pain in the ass.

1) get sata controller drivers, place on floppy disk
- this must feature a file called something like oemsetup.txt on the root of the disk, with files surrounding that. look at the driver cd for the board, you should find a folder with the appropriate files
2) boot windows cd to install, press f6 as soon as it gets a mention on the screen
3) insert floppy, tell windows setup to scan for drivers, pick the right controller from the list
4) carry on as normal
Make sure you have a floppy with the your motherboards serial ATA drivers on it handy. Install the drivers for it from that when you get the "press an Fkey if you want to install a third party RAID or SCSI driver".

To err is human. To really foul things up ... you need a computer.
Just a warning the push Fkey if you want to install thirs party raid drivers prompt isnt a big thing on the screen. Its right at the bottom of the screen in small text. Happens quiet early on in the install process, so keep your eyes pealed.
or just tap the button franticly for 30 seconds , well it works for me .

I have pressed F6 and i get the option to install 2 different kinds of raid drivers. i have got a MSi K8n neo mobo and the floppy disk is supplied with it. I have to say that I am not having much luck with this and it is annoying me immensely. Also my new 250gb maxtor sata drive is only displayed as a 137gb hdd how do i remedy that?

ok the 2 drivers are
Nvidia raid class driver
Nvidia nforce storage controller

Choose Nvidia raid class driver.
If you have picked the wrong one. Then setup will fall over when it gets to teh partitioning bit as it wont be able to see the disk. Repeat and try Nvidia nforce storage controller and see if you get further with that.
But my bets on the Nvidia raid class driver.

137gb is a limitation in operating systems which don't support 48bit lba, such as older linux kernels, windows 9x, windows nt, windows 2000 pre-sp3, and windows xp pre-sp1.
a slipstreamed sp1/2 xp cd would support larger disks, server 2004 would, 2000 sp3/4 would, recent linux would.
if you really don't have any of those options, you can install to a 137gb partition, install the latest service pack and change a registry value (HKEY_LOCAL_MACHINE\SYSTEM\CurrentControlSet\Services\atapi\Parameters\EnableBigLBA = 1) to make the remaining 100gb partitionable and formattable as a second partiton in the disk management window. not ideal, but xp is a 3-year-old os, and isn't designed for newer developments like big disks.
as for which driver to use, you're being given the option between RAID or not-RAID compatible drivers. I'd go with the RAID one.
