I have a product key for windows 7 ultimate but no CD reader on my new build. If I follow the instructions to boot from USB, so I have to find an ISO image of windows 7 ultimate or do I just load any version of w7 and then go from there do you know?

you need a version with ultimate, and it is not an iso on usb, instead extracted files.
lots of guides out there if you google them.
you can also find all in 1 images to use that give the option of what install you want.

Any windows 7 image will work as the base, just delete the ei.cfg file from the sources folder to make the image an "any edition"

If I do that shaithis, does that mean I can select which version it needs to install as it boots?
Yes, it will come up with a list of versions on install

A USB workaround is obviously not all that difficult.... but I often wonder if it wouldn't be more straightforward (for a desktop build, at least) to just buy a £12 optical and plug it in to your motherboard for an hour.
Not really in the spirit of going disc-less, I concede.
