"So, any suggestions for such a program that doesn't write to appdata along with launching itself alongside games? Other option is setting up a junction in appdata, but pretty sure that will just end up writing to both drives."
My first thought was whether or not you could do a symbolic link so that the actual folder is on the HDD. I thought that might do the job.

Re: Game capture software
Do you not still have the AMD software? ISTR it was some third party thing that they bundled, so might work for Nvidia cards as well (speaking from a position of always trying not to install such stuff so I could be quite wrong).

Yeah, same here. I think that would end up writing to both though - easy to hear if it's writing to the hdd but hard to tell if it's writing to the nvme without minutely tracking the usage (plus, the disk usage % in task manager is pretty useless with multiple drives). I wanted to see if there's any software I've missed before I disappear down that rabbit hole.

Nah, it doesn't reinstall as it can't detect AMD graphics hardware. There are generic AMD drivers on the system though from the motherboard, but not the full catalyst suite.

Well i thought the idea of the sim link was that it was pretty transparent to the system so not that it copied data from one location to another just that when the system goes to write to that folder it is essentially redirected to the drive where it actually is.
Re: Game capture software
OBS Studio can be set up to work like Nvidia Shadowplay, & you can set the location for both temporary & recorded files. It works best if you have an Nvidia GPU and use the nvenc codec, but this requires Windows 10. I think there is a version of OBS which is optimised for AMD cards though.

Having a go with this, but what I don't see is how to get it to automatically start when games are launched, nor where it writes temp files (shows recording path, but don't see temp).
Re: Game capture software
have you tried the xbox app - Winkey+alt+r not sure if it will fit your needs but maybe worth a look ( windows 10 only i think)
Re: Game capture software
use screen recorder for recording live game play.
