Foobar2000 mate, it rocks for this kind of thing.
The general rule for reaching MP3 zen at the monent is rip with EAC, play and convert with Foobar2000 IMO.
Loading the cue file shows all the tracks in the WAV (or FLAC image or whatever) in the playlist window. Select the tracks you want, right click and choose either "Convert" or "Convert as single file". You can set it up for any encoder and bitrate.
Nice to see someone else that learned the way of the MP3 ninja mateAll you need now is Foobar2000.
There are some good guides here; http://wiki.hydrogenaudio.org/index.php?title=Main_Page
BTW, if you plan to keep your images (which is by far the best way to archive your music) i would highly suggest compressing them with a lossless encoder like FLAC, Monkeys audio or even Wavpack.

I was going to archive with a losless encoder, but it was too much hassel and i have the space, also, i dont want to lose the program to take it back to wav or not be able to use it int he future?
One other question, what is the difference between raw and wav ?

Download the lastest LAME encoder if it's MP3 you need. Look in Foobars2000's preferences -> componants -> diskwriter. There should be a selection of presets already there to try. I think Foobar might already contain the LAME encoder, not sure. TBH, you really need to just play around with it for a while till you understand it. Once it is setup it's quick and simple.
BTW, EAC will rip to an image and automatically compress it (with the encoder of your chioce) and creat a CUE file for you. Look under actions -> copy image and create CUE sheet -> compressed. You will need to set it up, but its very simple. Look at the guide on the link i gave you above.
If you have already ripped to WAV, you can compress it with FLAC etc then open the CUE file (its just a text file) and change the name of the file at the top. It's dead simple. Dont forget lossless is exactly that, lossless. FLAC files can be 'inflated' back to the orginal WAV with no loss of quality. But with things like foobar and FLAC plugin or NERO etc, you should find you rarely have to do this.
managed to get it working, it says that it has lame but i still had to download it and point it to the right place

it seems to be recording them at different bit rates, most are at 320 but some are lower (high but low) does it simply select the best bitrate or what?
I will be using them on the new sony with some £30 headphones, so i obviously want them decent quality

I should not be doing them in different bitrates, you must be doing somthing wrong mate.
If it's decent quality you want dont go lower than 192, maybe even 256.
EDIT: Hold on, your probably using variable bitrate. You may need to alter your settings in Foobar. (LAME is command line driven - foobar just passes a string of paramater to it. You can use preset ones or do you own if you understand what they mean). Again, look on the site above. Thier foums are probaly the best on the net for MP3 etc advise. I learnt almost everything i know from there, some real pros and very helpfull.
