Trying to decide whether to go for the faster speed or 8gb more capacity.

Doubt you would notice any difference between 300mb and 600mb in the real world. I gather you are swaying between a 120 and 128gb ssd? Better deciding on controller and the iops speed.
There is virtually no difference.
SSDs vary on a number of vital statistics, including IOPs, access times, random speed, and sequential speed. The headline numbers, i.e. 490MB/s and 550MB/s are sequential speeds, and virtually irrelevant for anything other than transferring massive files (and who does that on an SSD?).
For me, the priority is what kind of controller is used, i.e. does it have known performance/reliability problems, the size, and the warranty. Speed comes way below all of them. Whatever SSD you get, it will be quick. A quick SSD is phenomenally faster than an HDD, and you'll notice it. A really quick SSD might be a bit quicker than another SSD, but you almost certainly won't notice it unless you're comparing side by side.
