Just buy a SSD that you're happy with. Samsungs are the normal recommendation if your budget stretches that far. While the SATA speed means the drive won't hit it's maximum sequential speeds, most of the 'speed' you feel from a SSD comes from the access times of the data, so you'll still feel a huge increase
There is a third party custom 'Middleton' BIOS for the X61 which enables SATA2 speeds:

Possibly riskier than a normal BIOS update though.
But as Agent already said, the biggest benefit of an SSD is access time and concurrent operations (IOPS). Headline transfer rates are pretty much exactly that: a headline.
Yeah, I did look into the Middleton BIOS but was put off by the bumpf which stated all the 'beware' warnings.
If that Samsung 830 is lying there with nothing to do, slap it in. It's overkill but better than spending money when you don't have to.
