An early Octavia VRS ticks all the boxes as far as I can see...
Any other ideas?

So what did the OP choose? If anything?
The OP is waiting for offers for his car but generally looks like he's choosing to sort his wedding first
Once everything is clear in half a years time I am definitely going to revisit the 9-5 aero option. Seems like that's a helluva lot of car for the money. But if anyone has any more of the "not quite as fast but a lot more economical" options please keep posting them. I mean a CLS 320CDI does 0-60 in 7 seconds and 45+ mpg on the motorway... How mental is that. They start at 10-15k mind So more of that but cheaper would be great

SEAT Toledo 2.3 V5?
Seconded although a good example is out of your budget and with a wedding on the way you probably don't want to push the price much beyond £3k.
Something like a Mazda 6 MPS would blend the Scooby performance with a more manageable daily drive but they go for at least £8k and I can't think of anything similar in your price range.
Still got the Prelude and I reckon when I do get round to changing it (soon, but got to get a second car first - my other half will be learning to drive) it will probably be a Saab 9-5 HOT Aero (even with a stupid name like HOT it's quite a an excellent car).

Done.

High Output Turbo.. I know HOT seems silly .. but its what it is, bearing in mind there are LOADS of LPT models too.. Low Pressure Turbo.
Now... tyre tyre tyre.... it'll prolly need fronts.. after your first weekend

There is a warning light which I believe is for the height adjustment on the headlights. They do seem to go up and down when being switched on though (car is on parent's driveway till I sell the prelude, talking of which:

I think this may be why he didn't do the promised new MOT (we brought him down a fraction on the price, but having travelled 250 miles we weren't in a strong position to negotiate). Any idea how much I am looking at to have that light checked?
There's not too much life left in tyres as is, but it's waiting till I sell the prelude before I can swap insurance over, so they are safe for now
