Saw a flash on the other side of the road earlier when taking my mate home, looked over, there was no car on the other side of the road

How does that one work

Fake cameras take photos in both directions. It works, because the majority of drivers wouldn't know a gatso from a truvelo and that a gatso can't get you head on.

It happened because they don't always work how they should (hence me being clocked at over 100mph in heavy traffic in a transit pulling a 2 to 3 ton trailer).

The won't deliberately flash when you're heading towards them, it's just not gonna be safe.
