    Do even more cores give better performance in games? I thought most games only run a maximum of 2 threads if that.

    That's a very old view, which was invalidated once the newer games started to appear using the newer engines.

    For the record, I went with the i5-4570 and everything's been running fine, upgraded to a 27" Gsync 2k Asus monitor (when my old Dell blew) and also a 980Ti and it deal with that ok.

    Id recommend at least a quad core processor with the latest triple A titles, with a high clock to if possible will be an ideal CPU for gaming. I'd recommend the Intel Core i5-6500.

    i5 over i3 (personally). Second hand CPUs are an excellent source of savings.

    I think that you should should stick with the i5, the i3 itself has hyperthreading which gives you 2 more virtual cores as opposed to real cores like the i5. Virtual cores do not have as much performance. The i5 will be more future proof even with general games, the i3 can be lacking sometimes. If you have the money, go for the i5, you might want to play a more demanding game at some point and the i3 will not provide enough performance.
