I wouldn't hold out for Skylake, can't see it dropping much. IMO not much of performance upgrade when an i5 4690K/Z97 mobo/RAM can be had for less and won't bottleneck GPU.
Mine will OC to 4.6Ghz easily (1.27v) as gaming benches don't improve much 4.4GHz (1.18v) is what I use. Even at 4.4GHz it doesn't bottle neck current gen GPU and can't see it bottle necking them for a few future GPU gens (IMO). IIRC the 1.18v for 4.4GHz is lower vCore than what the mobo defaults to use when CPU @ stock speeds.
I'm not an Intel fanboy, have had AMD in the past but past 2 builds been Intel. For me they're lasting longer before an upgrade required.
I understand your point of trying to buy together to save on postage but if you do go down the route of say buying x item a time (like your saying) via say looking at threads (as they come up) on HotUKDeals you won't lose out.
Amazon warehouse deals IIRC are always free shipping. Their support is the best IMO on open box items. You get a full year, if manufacturer / they can't repair you get full amount refunded. Another thing I've experienced is if they state an item is "Like New" and don't list a missing item in the box ie a uk power plug they'll give you a refund to x value promptly.
I've bought a few "Like New" items and so far all have been brand new, recent example bought a Google Nexus 7 outer box had seal opened but everything inside was sealed unused.
One thing I will say is Amazon warehouse deals can at times be not that competitive, so do double check what item costs elsewhere. I have noticed they sometimes start reducing item if it's not selling, so monitoring can be good tactic.
One of the best places to find out what good promos have been around is using search facility on HotUKDeals. This will give a you a feel for what is considered a good price for x item (IMO), look how hot a deal gets .

Well I went on amazon warehouse and found a deal and then went to barclays and they had a comparison to get the best deal.
Amazon warehouse deals are used / open box items, I didn't think Bespoke offers beat those, I will try my self.
For example.

Then via there warehouse deals you have used - like new for £121.66 Link:- http://www.amazon.co.uk/gp/offer-lis...condition=used
Latter would not work on Bespoke and I think they'll give you a price discounted off new price, ie £146.97.
I use Bespoke when say for example i5 4690K at ebuyer for £148.98 and they gave me deal of £134.39.
When buying I accessed Bespoke via a cashback site and now waiting on further £20 quid back .

I just looked and its now £178.98
Could anyone build me a computer around the Intel i5 4690K? Dont need a case because I already have the NZXT S340. I would like the build to total to about £500 could go slighlty higher if needed.
Deals like that last a day max, you needed to step on it as soon as posted.
Last night I did enter that offer into Bespoke and got a price of £141.43 (their discount is variable), glad I bought the last deal .

I've just checked and I got my Intel Skylake 6600k for £168.53 - 15% cashback (which didn't initially track - I had to file a support ticket with TopCashBack).
So that was a comparable £143.25 delivered. Just throwing it out there....

It was via Bespoke Offers when I gave them an ebuyer link. Unfortunately, I didn't record the ebuyer price they beat, but I think I recall it was significantly less than £185.99. Week 1 or 2 after release, maybe.
Sorry I couldn't be more specific here. It's a steal at £143 though, 4.6 stable here.

I have the following to add though...
If you intend to use parts from the existing old PC, what are the parts? How old are they? compatible?
Is your PSU powerful enough to drive the new Mobo/CPU and more importantly is it going to cope with a new GPU?
AMD graphics cards are more power hungry than Nvidia generally, as I found out with my R7 260x. I have this paired up with an i3 and 8gb of Ram and it runs BF3 extremely well in high settings, and plays bf4 very well too in a combination of Med/High settings...
So your purchases are going to be new Mobo, CPU, Ram, GPU, wireless network card, and possibly a new PSU?
From experience (my dads PC) an i5 with a half decent GPU (r7 260x) will be great with most games, just don't expect to be able to run everything in Ultra.
Manage your expectations, know that you aren't going to get a top-end machine, and accept that it will run pretty much everything pretty well and you won't be disappointed.
Just a quick note about bespoke offers.
Since, you are buying vouchers, you wave alot of your consumer rights by doing so.
Be careful out there.
I5 4440/4460 (note that they are not unlocked so you cannot overclock them) and an asus Z97-P or Z97-K or a Z97 Pro Gamer if you want an SLI bridge
i5 4690K has gone up in price since the Ebuyer price!
