Eyefinity user here - 3 monitors for gaming, you don't want that crosshair split across your bezels.
If you have any favourite games you will need to check triple monitor support for them as you might find they don't work as you would like (see here wsgf.org).
I expect you have a decent GPU to drive them too (I'm not an eyecandy ho so my HD5850 adequately runs my screens at 5900 x 1050)

Yeah, I can't see dual monitors working for gaming at all really. Although saying that I can never really make use of three for work, I always end up only properly using two.
for work I would go with 3 x 24". I had 2 x 24" but I was constantly shifting from one to the other which became a strain on my neck.
Having 3 x 24" you get a more ergonomic setup.
I'm just moving from 2x27" and going for one of the 40" Philips 4k Monitors.
You should also look into that.
Personally I'd go for three. Hate the idea of the bezel being right in the middle, that would annoy me really quickly.
Yeah depends on what you are doing.
RTS games or games that have main info on one screen and only secondary information on another (supreme commander comes to mind with the tac map on the 2nd screen) or if you productive workflow focuses mainly on one screen (like I do when doing photo and video work)
but if you are going to do any FPS gaming you need a single or triple setup so the bezel isn't in the middle

You really cannot game on 2 monitors, it just doesn't work and your head and eyes will feel like they have been messed with in no time at all. I have tried!

3 24" monitors is best, for both gaming and working.

Have the 40" Philips 40k now and love it.
Single r9 290 runs games fine and can downscale to 1080 if too graphically intense.
I have had various configs of cross fire and 2 previous eyefinity setups for the last five years. No need for eyefinity now as screen size has caught up. Go 40" for £600 you wont regret it.
