Sweet Chilli Tiger Prawn Stir-Fry

Ingredients
2 tbsp sesame oil
1 large onion, peeled and chopped
2 garlic cloves, peeled and crushed
1cm piece fresh ginger, peeled and finely grated
120g pack s h i take mushrooms, wiped and sliced
1 red pepper, deseeded and sliced
½ pointed cabbage, outer leaves removed and sliced
3 tbsp oyster sauce
1-2 tbsp sweet chilli sauce
300g pack chilled Chinese stir-fry noodles
1 tsp chilli oil
250g pack jumbo king prawns

Method

Heat the sesame oil in a wok over a high heat and fry the onion, garlic and ginger for 2 minutes.

Add the mushrooms, red pepper and cabbage and stir-fry for a further 2 minutes.

Add the oyster sauce, sweet chilli sauce and noodles and stir-fry for another 2 minutes.

Transfer the noodles to a serving dish and keep warm.

Heat the chilli oil in the wok and fry the prawns for 2-3 minutes until the prawns are pink all over and have curled up slightly.

Serve the prawns on top of the noodles immediately.
