There are a number of NCP multi-level car parks I think. I don't have a car, so I can't comment on the prices.
Presumably once people are parked up they won't want to be moving again, so that confines us to the town centre/Park Row/Triangle areas; maybe a bit further if people like walking up hills

Probably about the best option is the Trenchard Street car park behind the Colston Hall. It's where I usually park and is fairly convenient for Park Street or the centre.

Argh, only just read this! I'm not gonna be about but do yourselves a favour and don't go to a Weatherspoons when there are any number of great REAL pubs in Bristol. I'd recommend the Coronation Tap in Clifton. There's parking there too. Not sure about their food but the cider's amazing!

Sounds good my off road thing starts at 4, so just got work out how long its gonna take me from the meet to get to west harptree!

So why didn't all you people come up with these suggestions before now? I suggested a Weatherspoons because the beer is cheap and generally there is a good selection in there and it's also central to Bristol, so easy for people to get to.
