depends on the type of Jazz , but in terms of Trad Jazz , check out Oscar Peterson (pianist) , Stephan Grapelli , Django Rhinehart and Fats Waller
for something a little more lyrical , then perhaps some Nina Simone or Billy Holiday

Glen Miller - Mood Swings is good if like a bit of Big Band-ness.. If you like contemporary stuff, then anything by Wynton Marsarlis or Alan Vizutti is good... for a bit of Fusion, go for anything by Miles Davis, I have the Very Best Of and it's great. Dave Brubeck is superb also.. and if you want pure traditional New Orleans style jazz, there's several good compilations out there, multiple artists and big single artist collections.

I've got to say my introduction to Jazz was the Very Best of Smooth Jazz, some classics on it.
Gives a good taster if you don't know who you particularly like yet..
