'Fresh', because freshness, above roast and blend, is the most important factor when it comes to coffee.
Once roasted beans last a week tops, and (no pun intended) once ground time really is of the essence. On the subject of grinding, there are only two points of note. The first is to use a burr grinder, not a blade, as the later chops and generally mullers said beans. The other is to use the right grind, for espresso you need a fine grind, for a cafetiere you need a coarse ground to prevent over extraction.
The other key factor is good water, after all coffee is 98% water. The other key point is not to use boiling water, that's for tea. Boiling water scorches it, and leaves a bitter brew.
As for what beans/roast for me, it really depends on mood, normally anything strong enough to patch up a road does the trick!

I really like Lavazza, but try and buy fair trade stuff when I am in the UK. Asking people in Australia for "Fair Trade" coffee is like asking them what who their favourite philosopher is. Total blank.

I normally buy fairtrade instant coffee, which is good (cafedirect 5065 something like that) and fairtrade tea's pretty good too.Fairtrade does what it says on the label; it guarantees a better deal to producers in the developing world.
This means a stable price which covers their production costs, along with a premium that their organisation will be able to reinvest either in the business or social and environmental schemes among the wider community.
Too many farmers in the developing world have to contend with fluctuating prices that may not even cover what it costs to produce their crop.
Lazy Sunday by Taylors of Harrogate is REALLY nice - tastes like the coffee you get in coffee shops. But I don't make it in a cafetiere, or a coffee filter machine, I just put it in the cup, pour the water on, and then use a fine seive to filter out the coffee...

I have to agree with that. I LOVE the smell of freshly ground coffee beans, but I really don't like drinking it, which is a shame really! I had some in error the other day (picked up someone elses cup - thought it was my tea!!!) and it was HORRID!!! Tasted like an old ash tray... YUK!!Originally Posted by spazman
