Fastmail's privacy policy looks fine to me, better than most.
From what I can tell, they don't make impossible claims like GMX, for example, "No Chance For Viral Attacks" - they can't guarantee that, either they're lying or don't have a good understanding of the subject; either way it's somewhat concerning.
On the subject of encryption: PGP (GnuPG is a commonly used implementation) can be a faff to set up, and both ends need to use it. It's probably not what you're expecting, but it's about the only real solution if you want end-end encryption, and you will need compatible software on every device/computer you want to read the email on.
