Yesterday I saw someone make a lemon drizzle cake with mashed potato instead of flour.
And it worked. It worked well. n fact it was better than flour.
I love finding out new way to make cake!!!!!!!!

Interesting... I'm sure we're all familiar with potato in breads, but this is the first I've heard of it in cake. It does sound gluten free, and I'm allergic to gluten free foods, but I'd give it a try if I didn't know...
