rebuild, unless you do a full system level backup and then restore to the new un-raided partition, tools such as acrononis and ghost can do this
do I have to remove any hardware (controller boards, cables, etc.)?
Depnds on the card. Obviously you need it in place when you are copying the data off the array. If it supports the drive in a non-raid configuration, then you can leave it in place, although if your mobo will support the drives natively, there may not be much point. Depends on your setup.
