Looking at the WD 640Gb and the Samsung 1Tb drives. Can anyone tell me if they will come with cables or will I need to buy a mobo with SATA cables? Will the Asus P5Q-E come with enough SATA cables to run the two HDDS?

You don't get cables with the Samsung one certainly, I doubt you will with the WD either tbh.
BTW if you do get the Samsung, select it from Scan's today only section, it's a bit cheaper there this weekend.

No cables with the disks, sometimes they don't have mounting screws either.
Asus boards usually come with two SATA cables so you should be fine.

Yeah... almost all new (retail boxed) motherboards come with a dearth of SATA cables
More than you're ever likely to use in a system actually... let alone use with the particular motherboard you got them with!
So if you... as many do, update to a new motherboard quite regularly... chances are you'll eventually have dozens of the damned things lying around, which you're never gonna need/use

I have had a problem with a sata cable cracking at the connector - giving unreliable performancce - and given that they are pretty cheap, it is probably worth buying at least one just in case the mobo isn't supplied with enough - my Asus board came with one!
