I do care about water resistance because I had experienced sudden heavy showers on hikes that did a number on a couple of electronic devices I have owned. It has become my must have feature if you aren't going to allow me to change the battery (I am told it's one or the other, though I would still like to see some engineering marvel that allows for both).
However, if the competition are able to make water resistant phones with a headphone jack, I do not see why Apple can't. It's not like the competition isn't providing Bluetooth support. I use Bluetooth with the headphones in my helmet when I am snowboarding (and to be honest, it doesn't work as well as wired, cutting off at time), but wired otherwise.. by choice. And I appreciate having that choice.
But to be honest, I don't think most people will be bothered by it. No unlike how most people aren't by lossy compression, I think that it's really a small niche of people who really like

Ah, yes, forgot about that. I guess I should specify that though I do replace my batteries once it gets worse after a few years), the main reason I want removable battery is to fit a monstrosity like those ZeroLemon that last for days, and for that, I do lose the water resistance. But I guess it does prove that there is no reason why a manufacturer can't make their own massive batteries to alongside a carefully designed backplate to go with the battery that is water resistant. And I'd pay for it.

The cynic in me disagrees, a removable battery defeats an important facet of planned obsolescence.
In my mind, the same reasoning applies for Apple's push for the removal of the 3.5mm jack and the push for much more expensive, invariably non-serviceable and easily misplaced wireless devices.
Apple are one of the very few organisations who can pull off tactics like this, the unfortunate result is that the rest of the industry eventually follows suit and proliferates 'features' that are detrimental to the consumer.
It should be doable (!) on the S5 as the gasket etc. is there. But as you mentioned..the manufacturers don't see it that way

Apple, at least has been consistent in that they never offered removable battery in the first place. Headphone jack, yeah - definitely a step backward. Samsung though has played around, eventually settling for non-removable battery (though I think that there is a general public support - so often have I read reviews in the past complaining that the removable plastic backplate isn't as sexy as the non-removable ones blah blah), but also removing the microSD card last generation before putting it back in the S7 (had they not, I probably would've made the jump to LG - though that one lacks the water-resistance and removable battery).
