    Kedgeree, spicy style.

    I went into the kitchen to do some lunch - not much in the cupboards or fridge/freezer Not even a clove of garlic !!

    Almost in despair, I grabbed myself the last piece of haddock fillet (Tesco's Chunky, just fish, no breadcrumbs or batter), the last of the frozen peas and sweetcorn, and the last onion and red chilli.

    Microwaved the fish for 2m on max. Instructions say another 2m to follow, but I left it at that. Shredded the fish and left it on a plate. Chopped the chilli and onion and stuck them in a pan in some olive oil, fried off till soft. Added water, one veg Oxo cube and a dollop of Oyster Sauce. Threw in the peas, sweetcorn & fish. Left the lot to simmer for about 8 mins till the rice was cooked, and voila - Kedgeree with a bite.

    I was really surprised at how tasty this hotch-potch came out A nice fully rounded fish flavour, with a nice crunch from the peas & sweetcorn, and a chilli bite at the back of the throat... One for my book, definitely.

    Good stuff. When I do kedgeree I poach the haddock in milk with a bay leaf or two, and sometimes add the poaching milk back into the rice.

    Not sure about the oyster sauce....

    Mum kept making this when i was young. I sometime now gag at the smell now

    Oyster sauce adds fish flavour and saltiness. Great in stir fries too
