    Thai stylee marinade/dressing

    Hi. Just bought some raw prawns and was wondering what to do with them. Decided to stick some ingredients in a bowl and this is what I came up with!

    Juice of 2 limes
    Zest of 1 lime
    Generous glug olive oil
    Small glug Thai fish sauce
    Large glug Thai chilli dipping sauce
    1 large clove garlic
    1 small hot chilli
    Small handful coriander
    Small block of grated ginger
    Pinch of sugar

    Put my prawns in a large bowl, then put a couple of tablespoons of the marinade in the bowl with them and mixed together. Left for half an hour, then cooked the prawns in a frying pan with a little oil for a couple of minutes until nice and pink.

    Then put the prawns with a nice rocket salad with cherry toms and spring onions and peppers, and put the rest of the dressing over the salad. Lovely!

    Instead of the salad you could easily put the prawns with noodles or rice or just about anything really! Or you could not even use prawns and use the marinade for just about anything. Chicken would be nice in it as well. Dead easy and really tasty.

    It's the skin of the lime. You can get zesters that remove it, or you can use a normal cheese grater but it can go a bit mushy!
