Just made this for tea and it rocks!
serves 2:
150g fresh cod pieces (2)
50g fresh breadcrumbs (blitz 1.5 slices white bread)
0.5 teaspoon cumin (ground or seeds)
2 tablespoons fresh corriander (or 1tsp dried)
1 very small onion
method:
1) fry chopped onion gently for 4 mins, add cumin
2) mix breadcrumbs and onion and corriander in bowl
3) spread on top of fish (not skin side)
4) fry in pan (TINY bit of oil) for 8-10 mins
5) place pan under MED grill for another 5 until breadcrumbs browned.
serve with mash, green veg (brocolli) and cheese sauce
