    Nachos

    Found the ideal snack the other day in Tescos.

    Old El Paso Nachos kit, some mexicana cheese and some chicken.

    Stir fry the chicken, layer the nachos, the tomato sauce, the chicken and the mexicana cheese (should be grated but I find it easier to just slice it)

    Stick it in the oven for 5-10 minutes at 180.

    Voila. My favourite snack of the week.

    I guess you could do the same with doritos instead of El Paso nachos and make your own spicy tomato sauce - I'll leave it to some one with more culinary expertise to devise a suitable sauce

    Mmmm.... LOVE the Old El Paso stuff - Mexican food = YUM!

    Once you know how to make Nachos you can do your own variations coz tbh Old El Paso can be a tad expensive for what you are getting. Having said that their Fahijta kit is the best one out there imo - the spices for the chicken are delish!

    Yay Nachos.

    Had these many times in the Mountain restaurants in Canada when skiing (pronounced Narchoes there!). A flat wicker tray some 26" in diameter covered with Nachos cheese, jalepenos and stuff, all for a fiver.

    Cook Mexican loads at home. Make don't but refried beans. If you cba to soak Pinto Beans overnight then use a couple of tins of Kidney Beans (10p a tin in Tescos!). Homemade guacomole, loads of jalepenos, sour cream. Also found this recipe for a Mexican Pepper Caserole.
