    Marinades for fish?

    I plan to have more fish in my diet, mainly tuna and swordfish type steaks but they can be a bit dull if they're just grilled with nothing on them.

    I was wondering if anyone had any good marinade recipes/sauces I could use to go with them (preferably low fat)

    NB- Cod and parsley gives me nightmares! (it was one of the things i was forced to eat as a child)

    soy sauce -
    citrus based marinades can be good too.
    nandos also make a lovly range.

    Try a simple mix of sweet chilli sauce and lime juice, lush and really simple.

    OR....

    Piri-piri, tomatoe puree and red wine.

    Lemon, garlic and ginger.

    Smoked paprika, orange and chive

    Basil and balsamic

    You can make all of those by whizzing them up with a stick blender if you have one, use as much of each ingredient as you want to for your taste. Add a little water if it looks too thick (they should all be fairly runny)

    Marinate the fish in them for as long as poss but no longer than two days.

    When you come to cook them, warm up a frying pan, add a little oil to coat the inside of the pan and lay the fish into the pan. As it cooks you'll see it change colour, so when it gets to halfway, flip it over and finish cooking.

    Do all of that over a fairly high heat, that way you still get a lovely moist bit of tuna or swordfish... they can come out a bit dry if you grill them.... if you're into the meatier fish, try marlin and shark too.... most of thos marinaded will work for firmer flatfish like halibut or brill, but they're a bit pricey at the moment.
