    In need of inspiration for a celebration lunch/bbq

    Hi there!

    I have a family BBQ/lunch planned later this month, a bit of a special celebration, for about 20 people and I'm looking for inspiration. I'm going to do a slab of marinated salmon and spicy prawns etc but I also want to do a range of Caribbean dishes (doesn't have to be BBQ) - I just love rice&peas - so any ideas or tried and tested favourites?

    Don't know about Caribbean dishes, Carrie, but how about this:
    Pan-fry some Asparagus with a little lemon juice and salt then tightly wrap them in pairs with pancetta or smoked thin cut streaky bacon - finish them on the BBQ and enjoy.

    They work pretty well with a cheese sauce too.

    I like jerk chicken but its probably a bit too hot for this occasion. I could tone down curried goat a tad. Have you got a good recipe?

    What are you lot doing up so early in a Saturday morning. Well I'm off to gym, then getting my karcher out doing the drive way then having what I call a break with marinated steaks and some boerewors. With some pap with tomato and onion sauce.

    I'm only let loose in the kitchen under direct authority from SWMBO. She is usually serving up dinner as I walk in the door from work, so she lets me make a mess in the kitchen at weekends.

    I've been making this jerk sauce for many years. It is authentic delia.

    2 large red chillies, deseeded (to make it extra hot, leave the seeds in the chillies)
    1 small red onion, roughly chopped
    1 tablespoon chopped fresh flat-leaf parsley
    2 cloves garlic, peeled
    1½” inch (4 cm) piece fresh root ginger, peeled and sliced
    1 teaspoon Maldon sea salt
    1 teaspoon allspice berries, ground
    ½ fresh nutmeg, grated
    ¼ teaspoon ground cinnamon
    ¼ teaspoon ground cloves
    juice 2 limes
    2 tablespoons Japanese soy sauce
    2 tablespoons groundnut oil
    2 level tablespoons molasses sugar

    Whiz up in food processor until smooth then marinade your meat or fish in the sauce for at least a couple of hours.
    With chicken joints I just leave them in the marinade and bake in the oven until starting to go a bit dark brown on top.
    With raw prawns, just take out of the marinade, thread on skewers and grill/b-b-q for a couple of minutes.
    Pork chops - remove from marinade and put under grill, brush with a bit more marinade as required.

    A good way to end the evening is to get a lot of fresh fruit and chop it up and put on a tray and cover with honey and tin foil and place on BBQ for a few mins at end and let people help them self's or just make a really nice fruit salad
