    My general purpose "making sauces" pan is one of these: http://www.richmondcookshop.co.uk/pr...oducts_id=5590 - absolutely amazing, but again, being LC, not cheap. I'm a bit limited on pans as they have to work on my induction hob, so so cheapo aluminium things. I also have a £5 cast iron skillet which has the best non-stick I've ever used which I use for omelettes and the like.

    I have the same issue with requiring induction-compatible pans, but the situation today seems a lot better than even a year or two ago, at least on good quality brands. All the pans I mentioned above are used on an induction hob ..... which I love, by the way.

    I have some Le Cruset pans which work really well on an induction hob - which I also love! Le Cruset is expensive, but Judge and Stella do induction compatible frying (and ordinary) pans. Tefal pans are reasonably good quality pans that don't cost the earth.

    Otherwise go for a simple steel pan, but you will need to season it before use, and keep it seasoned. It also needs drying carefully after washing to prevent rusting.
