    Christmas twist on a light fruit cake

    Christmas is coming
    the house is full of cheer
    the fridge is full of rubbish
    and who bought that much mincemeat??

    I'm never going to be a songwriter, but yesterday's baking was good enough to share. I've had a half-used block of marzipan in the fridge for the last month, and there's only so much marzipan a chap can slice on toast. As I stirred the light fruit cake I started thinking... simnel cake is good, mince pies are good, marzipan is good - what if I combine the three? It'd also help to get through the kilo jar of mincemeat someone bought instead of the pound jar they were meant to get

    One hour later and a we have a very moist and tasty cake with a layer of marzipan and mincemeat through the centre. I wasn't sure it was going to cook TBH and I'd end up with a soggy tin of hot cake mix, but it's come out just done. Next time I'll add alcohol too. Cheers!

    On a similar vein here...

    I know this is a little late now(!), but as a little twist on the standard christmas cake we tried adding some chocolate stout (can't remember where we found the recipe, maybe Jamie Oliver?). Gave quite a light, moist fruit cake. Made a bit of a change from the usually heavy cake!

    Anyway, there's my tuppence of an idea for next year for anyone that's interested.

    Mincemeat over order...... I once ordered a christmas pudding for 8 people... judging by size in the photo.. and it was a single portion.....

    I kept it for years in my cupbaord to remind me what a plum I am

    Discovered today that cranberries and vanilla protein shake blasted in the blender with some ice-cubes make a concoction much better than the sum of the parts.
