As for seafood - Nick is there any rule on how to see how fresh scallops are i.e similar to mussels being open/closed etc ?

Glad you two have sorted out your tiff, I wouldn't want to have to give you both a week's holiday to cool off.
Wild, yeah, the rules are pretty much the same. Scallops you open BEFORE cooking though, so ay open ones are already dead and should be binned.
To be honest, they're more trouble than they're worth to buy in the shells... unless you know what you're doing, you'll never get them open... not without risking hurting yourself very badly.
