    In spite of me buying a Chinese tonight....

    Here's a little something I was cooking at work yesterday...

    Salade Nicoise

    Serves: 4
    Prep time:15mins
    Cooking time: 10 mins

    Ingredients
    2 pack little gem lettuces
    125g fine green beans
    200g tuna steaks
    3 tomatoes, quartered
    3 medium size eggs, hard boiled, peeled and quartered
    6 anchovy fillets, drained and roughly chopped
    10 black olives, stoned
    15ml spoon capers, drained

    For the dressing
    3 tbsp. olive oil
    15ml white wine vinegar
    salt and pepper
    1 tbsp. fresh parsley, roughly chopped

    Method

    Place the lettuce leaves in the base of a salad bowl.

    Cook the green beans in boiling salted water for 2 minutes then refresh under running cold water.

    Warm a frying pan over a moderate heat with the a little oil, then season the tuna steaks and fry on both sides for 3 minutes until cooked, then flake into large pieces.
    Arrange the beans, tuna, tomatoes, eggs, anchovies, olives and capers on top of the lettuce.

    Mix together the dressing ingredients, except the parsley, in a jar and shake well to combine. Drizzle the dressing over the salad and serve immediately, sprinkled with the parsley.

    Fillet Steak with Salsa Verde and Roasted Vegetables

    Serves: 4
    Prep time: 10mins
    Cooking time:15mins

    Ingredients
    For the vegetables
    2 red peppers
    2 red onions
    1 aubergine
    2 courgettes
    4 plum tomatoes
    4 tbsp. olive oil
    2 cloves garlic
    50 ml white wine

    For the salsa
    2 cloves garlic, finely chopped
    20g pack flat leaf parsley
    15g pack basil
    2 x 15ml spoons capers
    15ml spoon Dijon mustard
    15ml spoon white wine vinegar
    4 x 15ml spoons extra virgin olive oil
    1 bunch basil
    salt and freshly ground black pepper


    4 125g fillet steaks

    Method

    Cut all the vegetables into even sized pieces and place in a large bowl, keeping the tomatoes to one side.

    Blend the olive oil, garlic, basil and white wine together then pour over the vegetables. Mix well and allow to marinate.

    To cook the vegetables, drain off excess marinade in a colander, then spread the vegetables on a non-stick baking tray.

    Roast in the oven for 15 – 20 minutes. Add the tomatoes and cook for another 10 mins.

    For the salsa verde, place all the ingredients except for the oil into a food processor and roughly process. Add the oil and process until smooth. Season to taste.

    Preheat a griddle or frying pan over a high heat, season the steak with salt and pepper then cook for 3 minutes on each side depending on thickeness for a medium steak.

    To serve: Place some roasted vegetables onto a serving plate, top with a steak and a generous amount of the salsa verde.

    you can easily swap the fillet steak for sirloin, or even salmon or trout. If you want to do tuna with this, which is really tasty, lightly oil the fish first. you shouldn't need to use oil with the salmon though as it is an oily fish and with a decent non stick pan you'll get a lovely crispy skin to the fish... YUM!

    hey Deck.. bit ot i know, an prolly a bit cheeky an all..

    but you dont happen to know a good recipe for christmas cake do ya? the missus an I tried on out of Delia's Christmas Cook book the other night, instructions followed to the letter and it just dosnt taste right...
