    FAO Deckard

    Deckard,

    Help is needed urgently - i've just had an executive lunch with some clients, and i've just had the most superb meal, but i want to know how to make it myself.

    It was called Mequite (sp?) chicken. It was like a limey smokey bbq sauce with salsa and stuff (hey Zak it even had some peppers and stuff with it that i ate ) , i've just searched for a receipe on the net and i've not found anything in detail about how to make it, tho loads of companies seem to sell ready made packages of it...

    Do you know a reciepe for it?

    How the hell do you make Misquite meal then?.

    As i said i've not found a complete receipe yet, they all appear to want to sell you part of it.

    Thanks but if i could find a complete receipe i wouldn't have bothered asking.

    Yep, the previous replies are pretty much right. Mesquite is a style rather than an actual thing, the flavour derives from smoking over mesquite coals, or by marinating in mesquite liquor which is made from rinsing down the smoker after the logs have been charcoaled or burnt. I'm sure I have a couple of recipes somewhere, but I'm pretty sure they require mesquite extract or mesquite chips. You're best off getting a mesquite marinade.

    voila - chips and chunks - chips (soak in water overnight) then place in aluminum tray over top of lava rocks (or diffusion grille) and smoke your meat that way, or with a charcoal barbie, use the chunks on top of the coals.

    Works quite nicely, especially if the chicken is marinated in lime and chilli (I prefer marinating in lime and periperi just for the nice flavour) before smoking/grilling over the mesquite!
