    Question Global Knives

    Hello All. I've never posted on this site before so hello to everyone.

    I've a quick question regarding Global Knives. I want to buy some for my husband's birthday (he's a very keen cook), can you please give me your opinion on whether to get the hollow handles or the solid ones?

    Solid ones feel nicer to use, sit better in the hand imo
    But I prefer a wood hadle like Henckels

    I have a set of Global knifes with the handles with the hole design, I must say they are one of the best knifes i have ever owned i have not used the two types but these are great.

    It's personal choice between the two, really. I like my smaller knivers to have the solid handle, and the larger ones to have the hollow handle, because the way I hold the knife seems to balance better that way, but I've known some people prefer the opposite. The only way to know is to try the things in your hand... I'm sure you want it to be a surprise, so maybe take him to the shop as a surpise on the day?

    If they're the first Global knives he's got, give some thought to sharpening them - the Global steels and waterstones are pretty good. I don't use a steel at all, but use the whetstone every few weeks.

    Best knives I have are Swibo, not flash looking but great for everyday use. I have a couple of Wusthof & Henckel which are my weapons of choice. Great weight, soild & comfy in the hand with wood handles. As has been said, it's how they feel in the hand that counts most

    Also if youre getting a good knife or two, get a wood block or magnetic strip for storage.

    I have a set all hollow. Its all down to personal preference.

    I agree about the sharpeners - Global knives are very good but do require a quick sharpen every so often (well any knife isn't great unless its sharp!)

    If it is not too late you could try order from www.japanesechefsknife.com, lots of good knives and only $7 shipping.

    I would go for the tojiro knive which are at a similar price point to global, but not much better steel. They do them with horrid metal handles too if you like that sort of thing.

    Similarly, the global waterstones are quite good, but very overpriced, You can buy other japanese waterstone from www.axminster.co.uk or www.shokunin.co.uk. A 1000/6000 combo stone is a good starter stone.

    This is so difficult, it really is a matter of personal preference. I love my solid handle Globals, but you really ought to get the chance to feel them (and others to compare). I give my knives a few swipes on the ceramic steel every time I use them....is this wrong?

    I have sed and sharpened global, an old flatmate of mine had a large set. Santoku, deba, sugihiki slicer, flexible fillet knife and parer. At the time they were the sharpest thin i had seen, ad i was impressed, but i never really like the metal hanfles, that of course is a personal pref thing.

    The ceramic steel will touch up an edge, but it can de hard to maintain a consistent edge angel with it. It is much better than a grooved steel, which imo, shouldn't be used on quality knives. It is probably relatively coarse grit, so will give you a good aggressive edge. But if yu have hte patience to learn to use a waterstone then i think you will get better results, and you can still use the ceramic steel, to extend the life of the edge between sharpenings.     i have had about 10 different knife sets and i finally settle on my amazing globals (from costco who had quite a good deal). i think they are the best knives money can buy but...

    how do you know if they are hollow handle or not?

    where can you get them sharpened? i know you can buy global blocks ect but i am scared i would make the blade worse.

    i worked in a restraunt, i used globals for hours on end and found that i got blisters, then we got these kinves thats logo was a chinese symbol and had black wood handles with woodgrain metal and as far as im concerned the feel and comfort and blad kicked the sh*t out of the globals

    shun is the name of those knives

    Yeah, there quite nice.
    - Although having grown up a house of sabatier knifes, i prefer them.
    - Im possably the only student in the contry we a decent knife!

    As this thread is back on the go: Any recomendations of kitchen knifes from John Lewis? I have vouchers from spending too much on my Partnership card over the last couple of years and want to treat myself.

    So it's either kitchen knifes or a coffee grinder.

    Hollow handle, shake the knife beside your ear, you should hear sand in the handle.

    Sharpening, you wil need to check yellow pages. The person should not be using a grinder, those will ruin your knives. If you can find a pro sharpener who uses waterstones that will be best but bear in mind some of these gutys charge by the inch!
