Personally I'd drop the Arctic Freezer 7 Pro, yes it was a very nice cooler, however there are better/cheaper alternatives out there.
If you're not too scared about putting a pc together then The Scythe Mine is a better cooler for only a little more.
Or the Akasa AK-965x3, basically the same as the ACf7p but a few quid cheaper.
Personally I'd not go with the OCZ 600W Stealth, I seem to remember that the stealth range is the cheaper&lower quality range from OCZ.
Yes it should still power your system fine but so would much lower wattage psu.
a corsair hx520w will be very nice or anything decent around 450-500w you really don't need more unless you're planning on SLi/Crossfire or a big raid array.
