At least for newer cpus they use an on die diode to measure thermal drift.
I know for socket 7 was arse because the sensor was under the cpu.

Whenever i buy a mobo i dont really consider how it measures the temp. What
different methods do the manfus use? are the expensive ones using off chip ICs
    as well?

On die measurements aren't significantly more accurate, they still use the same crappy low accuracy sensor chips, and often the bios will do some "fiddling" with the data.

+- 10 degree C is huge I think its more that the compaines dont really care that much
or it costs to much, rather than what is actually capable.

can anyone prove a bit more info on the htt, i have a 400mhz overclock at the mo @1.6v but havent touched the htt, its still on 1000 so im assuming its running higher due to the overclock, but i have no problems, what is it all about and why should it be kept within 1000 ???

Running the HTT over 1000 can cause instability - as long as it's over 800 you'll be fine - so if you are going over 200 htt, drop to 4x, over 250 drop to 3x.

Also i think you'll be able to drop the the vcore to about 1.5 (probably a bit less) - 1.6 seems a bit too much.
