Overclocking: Dfi Lanparty nf4 series
Features: Asus A8n sli
Might be worth waiting a month or so to see how the new crossfire and ati chipset boards come out.
Cpu
100ish - 3000+ venice
200ish - 3700+ sandiego
250ish- x2 3800+
400ish - x2 4400+
3000 is a cheap overclocker, bit like the 2500+m was for nf2 but not as guaranteed
3700+sd will get you a pretty good overclock and has a 1mb cache so is a bit better in intensive gameplay
x2 3800+ is a good overclocker too, basically two 3200+ cores. Won't get you fantastic single core application performance but certainly not bad. Will be much more useful in the future though
x2 4400+ same as above but has a 2 x 1mb cache

The Asus Premium for stock, the DFI for overclocking.
The Sapphire boards should be amazing and look great - but will cost a fair bit of cashage
I'm getting a 4400+ and OC'ing it as much as possible: so thats my personal choice
