I need a laptop with the power to run a few VMs so maybe an i7? Also needs to have a high res screen such as 1080p. Not bothered about the rest of the spec. Can something like this be had for around £500?

Also: RAM and storage are at least as important (likely more so) than raw CPU for running VMs.
You will have to go with consumer level laptops if you want 1080p resolution. Anything will run VMs even if there's no VT-d support. The specs depend a lot on what your VMs will be doing and how many you will have.
I would recommend you buy the lowest possible RAM and HDD spec and upgrade these yourself to save some money as your budget is quite small. Dual core will be ok for around two VMs. If those VMs do little work then you can probably get away with dual core for even 4 VMs but then you will need to have at least 8GB RAM and 256GB SSD (don't bother putting more than 1 VM on a hard disk)
