650W PSU better if you're running two cards in SLI. 500w would do it, but you'd be running at near 100% capacity when gaming which wouldn't be good. A PSU will deliver most efficiency, not to mention less noise + longer lifespan, if it's running at around 50% load. So for one card + not much overclocking a 500w PSU should be fine. For overclocking and SLI/Xfire graphics I'd be wanting 650w-750w PSU.
If you're getting the white NZXT case check out the NZXT PSUs too. The Hale 90 series are also modular and are more efficient than the corsair HX range (gold efficiency vs bronze efficiency). They're also white to match the case. They may or may not be quieter with it. NZXT state 20dB max for the 750w model whereas Corsair state 37dB. Without knowing how these numbers were achieved or having them side by side to test though it's a bit difficult to say whether one is actually worse than the other. If I ever come into some money I'll buy a heap of the things and test them. Or if someone from Scan is reading this and feeling generous (in the name of research of course) then do feel free to donate some my way .
The only downside to the 2500k vs the 2600k is the loss of 2MB of cache. Won't hurt for gaming, might affect multicore behaviour for multithreaded tasks. Seeing as you want the gaming - I'd stick with the 2500k.

xeno when you do the image in imageshack click on it - on the page that opens are a list of options for embedding the image. Select the forum one and copy and paste the whole text into the forum box, otherwise you just get a hyperlink rather than the picture automatically appearing.

Both are more efficient than the Corsair. Plus they're white to match your case.
Sorry scratch that, you've gone for a black case. How about this PSU instead: http://www.scan.co.uk/product.aspx?ProductId=38626 which is currently on Scan Today Only for a bargainous £69.59. That's £27 saved before you've even thought about the better efficiency and lower electricity bills.
You could save a little bit by getting the OEM CPU seeing as you're using a custom cooler. You could probably reduce the RAM to XMS3 without too much penalty, though the price difference there is small at the moment.
Are these prices the today-only listings? If not you could save some money if you order before tomorrow lunchtime:

The list you give is £1053.33 before VAT or delivery. This one is £913.69 including both. Ok, the RAM isn't venegance and I couldn't find your case on the today only so subbed in the coolermaster HAF942 which gets good things said about it. If you want a cheaper case I use BitFenix Survivor and am happy, but it's not to everyone's taste. I also swapped the SSD to a 60GB model for a £20 saving.
If you're concered about price this hopefully sweetens it a bit...
Oh and as people have already pointed out - 20 posts gets you free delivery. They have to be useful posts though so ask a few queries, reply to people, answer other folks questions about your posts and suddenly, chabang free delivery for thee.
(If you get the free delivery then it drops to £896.89.)

You could also ask scan to swap the MOBO for the MSI GD53 http://www.scan.co.uk/product.aspx?ProductId=42785 which on today only is £107 - £11 more than the Gigabyte one in the bundle.
Similarly they might swap out the cooler to the H50 for a small extra fee.
