This is the card I've been waiting for - now is it one, or two?
When would you even need to use two? I would invest in one and grab a new monitor to push the limits of the card.

The Ti isn't a perfect 4K card. Quite a lot of games need settings dialled down. And that's now. Games coming out later in the year will probably have more demanding settings, and personally I *hate* having to fiddle with settings to find a 60fps sweetspot. I wanna ramp em all up to Ultra and be done with it!

Quite right. I have a Titan X Pascal, similar performance to 1080Ti (slightly less). It is NOT a 4K ready card. You ALWAYS have to either compromise on frame rate or settings. Now, I have a gsync monitor, which means lower frame rates are more tolerable, up to a point.
To be fully 4K ready, whether 1080Ti or Titan X, you will need SLI.
This has always been the way. People like to think top end cards are really fast, but they just aren't. They can never cope with with the highest mainstream resolution (currently 4K) at the highest settings.
