Slimline Windows Install?

Hi,

I need an up-to-date Windows install which will run nice and fast and have a lot of the crap cut out of it.

I was thinking 2000 Pro with most of the stuff it comes with chosen not to be installed, but are there any better versions of Windows specifically designed for this? I've heard of XP Embedded, but I assume that's only available to OEMs to be installed on flash ROM?
