What are you going to store on it? Is it just going to be a system disk or a data store as well? As no- one here knows what you intend using the disk for, this is not an easy question to answer.

As a general principle, the more storage the better, but how much you can afford depends on your budget.

one ssd for boot then another drive as a data store. the boot ssd will be nvme and data disk sata
