South Indian Pepper Water
(Tamatur Rasam)
This yummy vegetarian soup is guaranteed to gently warm yer cockles on even the frostiest of evenings!
You Will Need:
½ tsp Fresh ground black or Szechwan pepper
1 tsp cumin seed
½ tsp mustard seed
¼ tsp asafoetida
2 whole dried red chillies
4-6 curry leaves
½ tsp turmeric
2 cloves of garlic, crushed
300ml of tomato juice (liquidise some tinned tomatoes for a thicker soup)
Juice of 2 lemons
100 ml water
salt
fresh coriander for garnish.
To cook:
Heat a little oil in a large pan & fry the 1st 8 ingredients until the chillies are nearly black & the garlic is a nice golden brown. Lower the heat & add the tomato & lemon juice, water & salt (to taste). Bring to boil & simmer for 10 mins. Serve & garnish with coriander, (and fresh yogart or cream).
