So far so good, bought the mini yesterday, struggling to play 1080p stuff, but hoping CoreAVC might fix that.
1080p? I didn't realise you could even get that outside of BR disks yet?
You can get sample content in all the different resolutions and codecs to test for performance and compatability. Legally too

What tuner are you using with your Mac minis?
If you stick XP on there you can use any USB tuner
You can use mac specific usb tuners as well, suggest you look at www.123macmini.com and no I am not associated in anyway, just found the forum to be a got resurce for htpc mac mini setups and the reviews of specfic hardware is useful.

I used my old Mac Mini as a media centre and installed front row on it. Just make sure you are running one of the newer C2D versions or it won't be able to handle high definition video.
